Patatas bravas combines crispy potatoes with a spicy, garlicky sauce that is full of flavor and sure to please any crowd. When it comes to making the patatas, it’s all about the potatoes. You’ll want to use waxy potatoes like Yukon Gold, red bliss, or new potatoes as they are best for frying. Peel the potatoes and cut them into small cubes, about an inch in size. Heat a large skillet over medium heat and add enough oil to lightly coat the pan. Once the oil is hot, add the potatoes and season with salt. Fry the potatoes until golden brown and crispy, stirring occasionally. Once done, remove the potatoes with a slotted spoon and drain on paper towels.

For the sauce, you’ll need a few simple ingredients. Begin by heating a small saucepan over medium-low heat and adding the olive oil. When the oil is hot, add the garlic and let it cook until fragrant, about 1 minute. Next, add the tomato sauce, paprika, and cayenne pepper. Simmer the sauce for about 10 minutes, stirring occasionally. Taste the sauce and adjust the seasoning if needed. Once the sauce is finished, set it aside and let it cool.

To assemble the patatas bravas, put the crispy potatoes in a bowl and pour the sauce overtop. Stir until the potatoes are evenly coated with the sauce. Serve the patatas bravas warm with some fresh parsley for garnish. Enjoy!
