Spaghetti Winter Squash Recipe



As the days grow shorter and colder, many of us turn to comfort foods that make us feel warm and cozy. One such dish is spaghetti winter squash. This hearty, flavorful dish is both satisfying and nutritious. It’s also a great way to use up any extra winter squash you might have on hand.

Spaghetti winter squash is a delicious and easy-to-make meal that’s perfect for any night of the week. It’s simple to prepare, takes minimal time to cook, and is sure to please even the pickiest of eaters. With a combination of roasted squash, fresh herbs, and rich tomato sauce, this dish is an all-around family favorite. Plus, it’s vegetarian-friendly and can be made vegan with a few simple substitutions.

To make this classic dish, start by preheating your oven to 400 degrees. Meanwhile, cut one spaghetti squash in half lengthwise and scoop out the seeds. Place the squash halves cut-side down on a baking sheet and roast in the preheated oven for 40-45 minutes, or until the squash is fork-tender. Once cooked, use a fork to scrape the “spaghetti” strands from the squash and set aside.

While the squash is roasting, heat a large skillet over medium heat. Add one tablespoon of olive oil, then add one diced onion and sauté until translucent. Next, add two cloves of minced garlic and sauté for another minute. Pour in one 28-ounce can of crushed tomatoes and season with salt, pepper, and Italian seasoning, then lower the heat and simmer for 10 minutes.

To finish the sauce, stir in the roasted spaghetti squash and simmer for a few more minutes. Finally, stir in one cup of freshly grated Parmesan cheese and one tablespoon of chopped fresh parsley. Taste and adjust seasoning as needed. Serve with additional Parmesan and a sprinkle of fresh herbs, if desired.
