Not only does it provide a delicious flavor combination, but it doesn’t require any special baking skills or ingredients. With just a few simple steps, you can create a moist, flavorful cake that is sure to impress your guests.
To make a classic Scottish whisky fruit cake, you will need the following ingredients: 150g soft butter, 150g golden caster sugar, 2 large eggs, 150g self-raising flour, 25ml whisky, 75g glacé cherries, 75g dried cranberries, 75g sultanas, 25g chopped walnuts, 1tsp ground cinnamon, 1/2tsp ground nutmeg, and a pinch of salt.
Start by preheating your oven to 160 degrees Celsius. Grease a 20cm round cake tin with butter and line the bottom with parchment paper. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, and then stir in the flour, whisky, cherries, cranberries, sultanas, walnuts, cinnamon, nutmeg and salt.
Once the cake batter is well combined, pour it into the prepared tin and spread evenly. Bake in the preheated oven for 45 minutes, or until a skewer inserted into the centre comes out clean. Leave the cake to cool in the tin before transferring it to a wire rack.
To finish the cake, mix together 2 tablespoons of whisky and 2 tablespoons of golden caster sugar. Brush this mixture over the top of the cake, making sure to cover the whole surface. Finally, sprinkle with chopped walnuts and a light dusting of ground cinnamon.
Your classic Scottish whisky fruit cake is now ready to be served. Enjoy a slice as a dessert or serve as a tasty snack. The combination of whisky and fruit makes this cake a real crowd pleaser, perfect for any occasion.
