Since then, they've become a holiday favorite, especially around Christmas. Whether you're looking for something special to give as gifts or just want a tasty treat for yourself, Almond Roca Bars are a great choice. Here's how to make them.

First, preheat your oven to 350 degrees Fahrenheit. Then, line a 9-inch square pan with parchment paper and set aside. In a medium bowl, combine 1/2 cup of melted butter, 1/2 cup of sugar, and 1 teaspoon of vanilla extract. Mix together until combined, then spread the mixture evenly over the bottom of the prepared pan. Sprinkle 2 cups of chopped almonds over the top and press gently into the butter mixture. Bake for 20 minutes or until golden. Let the pan cool completely before continuing.

In a medium saucepan, melt together 1/4 cup of butter, 1/2 cup of light corn syrup, and 1 cup of packed brown sugar over low heat. Increase the heat to medium-high and stir constantly for about 5 minutes or until the mixture begins to bubble and thicken. Remove from the heat and stir in 1/2 teaspoon of baking soda. Immediately pour the mixture over the cooled almond layer in the pan and spread evenly. Place the pan back in the oven and bake for 10 minutes or until the toffee is golden.

Once the Almond Roca Bars are done baking, let them cool completely before topping with chocolate. Melt together 1 cup of semi-sweet chocolate chips and 2 tablespoons of butter in a medium bowl. Stir until the chocolate is completely melted and smooth. Pour the melted chocolate over the cooled bars and spread evenly. Allow the chocolate to set before cutting into bars. Enjoy!
